Cous cous and Feta Salad

Place one cup of Cous cous in a salad bowl and add one cup liquid made up of 3/4 cup fresh squeezed orange juice, splash of Balsamic vineger (not too much its strong!) a slosh of White wine vineger a bit of Sesame oil and Light olive oil. Amounts can be adjusted to taste and for a lighter option use more juice and less oil tho a little is needed. Set this aside to let the Cous cous soak.
Chop enough dried apricots to make up about 1/4 cup add Pine nuts, chick peas and/or other lentils to make up a cup full (lager ones like chick peas chop roughly).
Add a teaspoon of crushed garlic to the Cous cous once it has soaked up all the liquid, fluff with a fork to separate the grains and mix in the garlic, add the cup of chewy bits and mix a bit, coarsely crumble around 200 grams of Feta cheese, (more or less depending on taste), into the salad and mix though. Can be served right away or chilled till needed.

We were doing good till we came to the apricots.....darn things HATE ME

Yep you can swap just about any thing in this and its fast to make so its a real winner
