Margy's Potato Salad

Ingredients for approxmately 6 People:
2kg waxy potatoes
5 hard-boiled eggs
5-6 gherkins
1 onion
500g lyoner (?ring bologna?)
375ml salad mayonnaise
1 tablespoon sunflower oil
7-8 tablespoons vinegar
parsley, salt and pepper

Directions:
Cook the potatoes with their skin (try to use potatoes of the same size) for about 20 minutes or until easily pierced with a fork.
Peal the potatos and then dice the potatos, eggs, lyoner, gherkins, onion and put all together in a bowl.
Season it with sunflower oil and vinegar.
Add parsley, salt and pepper as required.
At last mix in the salad mayonnaise!

Make the salad a day before you want to eat it and put it into the fridge. It tastes better a day after it's made.

Already have it printed out and saved in my CookBook.  And sent a copy to the Grandson and he will make it before I do.  And he rubs it in when he has it made....but I don't mind....   I get to eat for free
