Paiges Feta Slaw

"Coleslaw with an inviting new twist of feta cheese and green onions - sure to become a new favorite! One large head of green cabbage may be used in place of the packaged slaw."

Ingredients:
2 (8.5 ounce) packages angel hair coleslaw mix
5 green onions, chopped
2/3 cup extra virgin olive oil
1/4 cup distilled white vinegar
1/4 cup water
1 large clove garlic, minced
1 1/2 teaspoons salt
2 teaspoons freshly ground black pepper
1 teaspoon Italian seasoning
8 ounces feta cheese, crumbled

Directions:

1. Toss cabbage and chopped green onions together in a large bowl; set aside.

2. In a separate bowl, slowly whisk oil into vinegar. Add water, garlic, salt, pepper, and Italian seasoning, and whisk until well-blended. Toss cabbage with dressing and feta cheese. Cover, and refrigerate 15 minutes or longer to allow flavors to develop.

Serve chilled.

Feta cheese - another 'weakness' of mine. This sounds pretty good. I might have to get some cabbage when I go to the store!

Hard to believe someone living in Wisconsin does not like cheese....but I doesn't like cheese....except for provolone or mozzarella or grated cheese...which are used on my Italian dishes...Like Pizza YUM....

That's what happens when you migrate to the Midwest from the East Coast.  My Mother doesn't like cheese either so we never really had it growing up....and I didn't miss it as I got older.  My girls love it and Linda loved it....but not I  :tearlaugh:

How sad, it is so enjoyed by me that I consider it to be a snack, or more to the point my version of junk food, although we do it in moderation.
