South African Salads

Ok here is a traditional Potato Salad we always make with Xmas time.

Like most we don't have a cold Xmas as we have summertime in December and thus we mostly eat cold foods, like cold meats and salads. We also don't eat turkey, but mostly chicken and cold as well.

Enjoy the salad:

Prep Time: 10 mins
Serves 15

10 eggs
12 medium white potatoes, with skin
1 bunch green onion, chopped
1 (14 ounce) can sweetened condensed milk
1 1/2 cups light mayonnaise
1 tablespoon chopped fresh parsley, for garnish (optional)

Place eggs in a saucepan and cover with water.

Bring to a boil and cook for 10 minutes.

Remove eggs with a slotted spoon and set aside to cool.

Add whole potatoes to the water and boil until a knife is easily inserted, but they are not too soft.

Drain and cool.

Peel and chop the eggs and place them in a large serving bowl.

Stir in the green onions.

When the potatoes have cooled, peel and chop then add them to the bowl.

Pour in the sweetened condensed milk and stir in the mayonnaise.

Sprinkle parley over the top.

Chill until serving.

Oh I so see potential for abuse on this one as in substituting some of the specialty mayo's I have like the Wasabi/mayo mixture or even the Sriracha/mayo mixture.

When you just have to have extra "zing"

Haven't made any potato salad from scratch in ever so long methinks I know what I will be doing today.

That's the fun with this salad. You can use any mayo and it's nice to make different versions.  :icu:

Now this looks awesome....I love potato salads and have tried many varieties.....Will have to give this one a go.  Just brought some Amish Potato Salad the other day since I was to darn lazy to make it :tearlaugh:

The sweetened condensed milf should make it sweet. Me, I like sweet relish in my potato salad more than dill so this would probably appeal to me. :)

I alos like to add a bit of sour cream or ranch dressing in it as well for a little spice.

In need of a fruit salad?

 Peachy Fresh Fruit Salad With a Flourish of Angelica and Mint! (serves 4)

1/2 charentaise melon or 1/2 other local melon, peeled and diced
2 ounces green seedless grapes
1 red apple, cored but not peeled
1 green apple, cored but not peeled
1 orange
1 banana
1 ounce black currants
lemon juice
peach syrup (made up with cold water to 5 fl.oz. )
fresh mint sprig
fresh angelica leaf

Cut the apples into bite sized pieces and the bananas into slices - then squeeze a little lemon juice on them.

Add the grapes, melon chunks, segmented orange and blackcurrants.

Pour the peach juice over the fruit and leave to stand for at least an hour before serving.

Garnish with fresh mint leaves or sprigs and anglelica leaves. Serve with single pouring cream or yoghurt.
