I use to use Ice Packs to lesson the pain and swelling. Worked well.

Red Beans and Rice Skillet

This very easy dish can be used as a main course or a side dish.

Makes: 4 servings

Ingredients:
1/2 pound smoked sausages, sliced
1/2 cup chopped celery
1/2 cup chopped green and/or red bell pepper
1/2 cup chopped onion
1 (13 3/4-ounce) can chicken broth
1 (15 1/2-ounce) can kidney beans, drained
1/4 teaspoon dried thyme
1/8 to 1/4 teaspoon ground red pepper
2 cups uncooked quick-cooking rice

Directions:
Cook first 4 ingredients in a nonstick skillet over medium heat, stirring often, until sausage browns. Add broth and next 3 ingredients. Bring to a boil. Stir in rice. Cover, remove from heat, and let stand 5 minutes.

Tips:
Add a glove of chopped garlic.

Add a tablespoon of sofrito, found in the Latino or International section of your grocer.

Add one packet of Sazon, found in the Latino or International section of your grocer.

If you wish to make it a vegetarian dish just omit the sausage and sub the chicken stock or veggie stock.

Feel free to use other meats or beans.

Sofrito is the secret ingredient in many Latin Caribbean dishes and it's so easy to make. It's a versatile, aromatic puree of tomatoes, peppers, cilantro, onions, and garlic. You may use a food processor or blender for desired results. This recipe makes about 1 quart of sofrito.

Ingredients
2 medium green peppers, seeds removed
1 red sweet pepper, seeds removed
2 large tomatoes
2 medium onions, peeled
1 head of garlic, peeled
1 bunch cilantro leaves
1/2 bunch parsley leaves

Step one
Peel garlic and chop ingredients into sizes that are small enough to fit into a food processor or blender.

Step two
Place the chopped ingredients into a food processor or blender.
Tip: If you find it necessary to add liquid, you may add water or olive oil a tablespoon at a time.

Step three
Blend together all ingredients well.

Step four
For immediate use, store in a glass container. Plastic containers are not ideal because plastic will absorb the odor of garlic and onions.
For future use, freeze sofrito in 1/4 to 1/2 cup portions for use at any time.

Sazon (The Dry Mix)

1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground annatto seeds (or paprika)
1 tablespoon garlic powder
1 tablespoon salt

Directions:
Step one
Combine all ingredients and mix well.
Step two
Store in an airtight container.
Step three
1 1/2 teaspoons of this mix equals one packet of commercial sazon.
